    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • There are 2 roof leaks - one above the 3 compartment sink (in the kitchen) and another above the bus pans (in the dining area). The roof leak above the 3 compartment sink was actively leaking during inspection. These leaks must be repaired.

    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Mouse feces noted in storage cupboard found outside of the main kitchen area. No mouse feces were noted in the kitchen. Facility uses a certified pest control operator for a monthly pest control program.

      • There are 2 roof leaks - one above the 3 compartment sink (in the kitchen) and another above the bus pans (in the dining area). The roof leak above the 3 compartment sink was actively leaking during inspection. These leaks must be repaired.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The QUATS sanitizer spray measured >400 ppm. This was diluted during the inspection. QUATS sanitizer should measure 200 ppm. Cloths are used to wipe food contact surfaces and are not being stored in sanitizer when not in use. Cloths must be stored in sanitizer as pathogens can grow in the warm, moist environment. The cook admitted to not using a sanitizer bucket at the restaurant. They were disrespectful and condescending to the inspector.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Cheese and burger toppings were left on the counter. These must be stored at ≤4.0°C and were moved to the cooler during inspection. Either keep these in the cooler or create an ice bath when needed.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • No test strips were available to check the sanitizer concentration.

    • 23. Is the facility maintained in a clean and sanitary condition?
      • Area under the deep fryer and grill have food and grime built up. Operator informed that currently the equipment cannot be pulled out to deep clean the areas and the facility is looking to replace the equipment by February 2024. Please ensure these areas are cleaned by the next routine inspection.

      • Copy of the current permit posted expired in 2021. Please ensure that a copy of the new permit is posted.

      • Area under the deep fryer and grill have food and grime built up. Operator informed that currently the equipment cannot be pulled out to deep clean the areas and the facility is looking to replace the equipment by February 2024. Please ensure these areas are cleaned by the next routine inspection.
