- Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottle had 0ppm chlorine measured. 200ppm chlorine was prepared by the operator at this time. All food prep surfaces were sanitized using the newly prepared solution at this time.
- Corrective Action(s): Ensure that all food prep surfaces are sanitized prior to initiating any food prep in the morning, after each possible contamination and every 2 hours during operation.

- Observation (CORRECTED DURING INSPECTION): It was observed that minor food handling was occurring in the area between the kitchen and the bar where no handwashing station is available. The operator agreed to move all food to the front bar at this time.

- Observation (CORRECTED DURING INSPECTION): It was observed that the food handler was opening the walk-in cooler and continued to prepare fresh salad rolls without washing hands in between. The particular staff then touched raw beef steaks, touched the cooler door handle and then again prepared fresh salad rolls. Staff was ordered to stop the food preparation and wash his hands first.
- Corrective Action(s): As discussed at this time, all food handlers must wash hands after touching non-food surfaces, handling raw meat, taking breaks, and as often as necessary after each possible contamination. Ensure to train all staff regarding this.

- Observation (CORRECTED DURING INSPECTION): 2 spray bottles in the kitchen were labelled as bleach sanitizer but contained 0ppm chlorine.
- Corrective Action(s): Staff remade the solutions at the time to measure 200ppm chlorine. Test strips are available - use the test strips each time a solution is made.

- Observation (CORRECTED DURING INSPECTION): Front handwash sink at the server station is missing paper towels. Facility does not have an extra supply of correct paper towels for this dispenser or a separate roll to place on the counter.
- Corrective Action(s): All handwash stations must be fully supplied with liquid soap, paper towels and a waste bin nearby.
- Staff supplied a small basket of napkins to use for hand drying. The correct kind of paper towels must be obtained for the dispenser.

- 2) Several used cans were being repurposed to use as storage containers for utensils.
- 3) Opened leftover canned foods were being kept in the original can.

- Corrective Action(s): IN GENERAL
- > All foods must be covered and protected from contamiation.
- > Any leftovers from opened cans must be transferred into a food grade container. Cans that have been opened are NOT food grade anymore and should not be used or repurposed for other food items or food utensils.

- Observation (CORRECTED DURING INSPECTION): At start of inspection, facility was thawing a container of frozen meat in a bucket that was stored on the ground. Surface temperature of the frozen meat was 0C, staff claimed it was taken out about 1 hour prior to observation.
- Corrective Action(s): All frozen foods must be thawed IN THE COOLER under refrigeration until it is ready to use, OR under cold running water in the prep sink. Do not thaw frozen food at room temperature.
- Staff moved the bucket into the walk-in cooler immediately.

- Corrective Action(s): - To minimize microbial growth and prevent contamination of food surfaces, keep in use wiping cloths in sanitizer solution. Ensure sanitizer solution maintained at required level of 100 to 200ppm chlorine.

- Observation (CORRECTED DURING INSPECTION):
- - No chlorine detected from the low temperature dishwasher. Sanitizer tube was disconnected.
- Corrective Action(s):
- - Operator re-connected the tube to the priming unit at the time of inspection. No chlorine was detected still. Sanitizer bucket was changed to a new one and after priming the sanitizer tube, the final rinse water measured 50ppm chlorine. It appears that the sanitizer tube is prone to being detached from the priming unit. Replace the tube & other parts so that this issue does not occur repeatedly.
