    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • The door seal on the bottom right of Loading Dock Door #1 was missing. The door seal was repaired and is fully sealed to prevent the entry of pests. Ensure that all exterior entrances are maintained such that they inhibit the entry of pests.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The sanitizer solution concentrations in multiple cleaning cloth holding solutions measured 0ppm. Staff replaced the solutions during the inspection. Ensure that the concentration for QUAT sanitizers are at least 200ppm.The most likely reason why the concentrations were low is that the dispensed solution temperature is too high. This leads to an increased rate of reaction and loss of concentration over time. Recommend either replacing the solutions at a more frequent interval or decreasing the solution temperature.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The MTO Cooler C ambient temperature measured 13C at the time of inspection. The manager indicated that the unit is undergoing maintenance to fix the temperature issue. Food inside the unit was moved to an adjacent cooler at the time of inspection. Ensure that the unit is not used to store high-risk food items until it can consistently maintain a temperature of 4C or below.

    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • In the bag-up area, the 2-door cooler located on the far left had its door seals in disrepair. The ambient temperature of the unit measured below 4C. Ensure that the seals are repaired in a timely manner so that appropriate ambient temperature is maintained.
