- The cooler and freezer door handles were greasy and covered with food debris, indicating that regular handwashing was not taking place. There was a layer of grease and grime on the floors and walls in the food truck.The operator was asked to clean the surfaces in the food truck

- Operator was thawing raw hamburger in the sink. When asked about it, he removed the bowl from the sink and placed it on the food prep counter. The bottom of the bowl was dirty from the sink. The operator then picked up a bag of the hamburger and some of the meat juice dripped onto the food prep counter. Operator was told to move the hamburger to a cooler (to thaw safely) and to clean and sanitize all the surfaces.

- There was no sanitizer available for use in the food truck. Operator indicated that he had his test strips but when asked where his sanitizer was, he pulled out his degreaser. Operator was asked to make up a bleach solution for immediate use.
