      • Observation (CORRECTED DURING INSPECTION): 1) Low-temperature chemical dishwasher registered 0ppm chlorine residual after final rinse. Sanitizer supply bottle was empty.
      • 2) Coffee machine frothing wand is not being sanitized regularly. Wiping cloth for the coffee machine was not stored in sanitizer solution in between uses.
      • Corrective Action(s): 1) Staff replaced the empty supply bottle with a new bottle at time of inspection. 100 ppm chlorine residual detected at the dish surface after the rinse cycle. Ensure to monitor the dishwasher sanitizer concentration with chlorine test strips on a daily basis prior to using the dishwasher. All dishware/utensils to be re-sanitized in the dishwasher.
      • 2) Sanitize the frothing wand with the Quat solution after each use or at least every 2 hours. All wiping cloths must be stored in your sanitizer solution in between uses.

      • Observation (CORRECTED DURING INSPECTION): Hand sink next to two-compartment sink was missing liquid soap (bottle was empty) and not located at the hand wash station.
      • Corrective Action(s): Staff refilled the pump bottle at time of inspection and placed the bottle at the hand wash station.

      • Observation: Frozen bacon and chicken were thawing out at room temperature.
      • Corrective Action(s): Do not thaw room out at room temperature. Frozen food must be thawed in the cooler overnight or under cold, running water.
      • Items were still frozen. Staff placed the bacon and chicken in a cooler at time of inspection.

      • Observation: Food debris accumulation noted in the following areas:
      • - on floors in hard-to-reach areas including corners and under/behind large equipment

      • Corrective Action(s): - Ensure equipment is regularly pulled out such that thorough cleaning can be done. Deep cleaning must be done on a weekly basis.
      • - Cooler door handles must be cleaned and sanitized frequently throughout each day, and interiors of coolers should be cleaned and saniitzed weekly.

      • Observation (CORRECTED DURING INSPECTION): Hand washing sink next to two-compartment sink was inaccessible as it was used for storing dirty frying pans/equipment/utensils.
      • Corrective Action(s): Staff moved dirty equipment to the two-compartment sink at time of inspection. Ensure hand washing sinks are always accessible/unobstructed for hand washing.

      • Observation: Undercounter pastry cooler measured 7C-8C.
      • Corrective Action(s): Staff had been in and out of this cooler frequently, according to staff. Monitor this cooler and ensure it is capable of maintaining temperatures at 4C or colder at all times. Contact a technician for servicing if temperature does not reach 4C within the next 30 minutes, and move all potentially hazardous food items to another properly working cooler.

      • Corrective Action(s): Staff adjusted the cooler's temperature setting at time of inspection. Cooler's ambient air temperature dropped to 5C by end of inspection. Ensure this cooler is capable of maintaining temperatures at 4C or colder. Please continue to monitor this cooler.

      • Monthly pest control is in place. Email a copy of this month's report to the health inspector.

      • Observation (CORRECTED DURING INSPECTION): Potentially hazardous food items stored in sandwich prep cooler (raw shell eggs, goat cheese, mayonnaise, different spreads and sauces, cooked potatoes, cut vegetables, and other dairy products) measured to be between 10C - 12C.
      • Corrective Action(s): Cold food must be maintained at 4C (40F) or colder. All potentially hazardous food items were moved to other properly working coolers at time of inspection.
      • Sandwich prep cooler to be repaired - see violation code 308.

      • - Remove droppings and disinfect all affected areas with 1000 ppm bleach solution. Monitor for any new droppings on a daily basis, and clean and disinfect as necessary.
      • - Store all food and food-related at least 6 inches off the floor and away from the walls. All food items, including dry ingredient bags, must all be stored in pest-proof containers.
      • - Seal any holes/pest entry points.
      • - Ensure to remove any potential food/water source at the end of each day. Deep-clean in all hard-to-reach areas, including under/behind all equipment.

      • Observation (CORRECTED DURING INSPECTION): 1) Sliding glass door cooler was measured to have an ambient temperature of 8C. Food items stored in this cooler had temperatures ranging from 6C to 8C.
      • 2) Sandwich prep cooler was measured to have an ambient temperature of 11C. Food items stored in this cooler had temperatures ranging from 9C to 14C.
      • Corrective Action(s): 1) Temperature setting was adjusted at time of inspection. Ambient temperature had dropped to 4C by end of inspection.
      • 2) All potentially hazardous food items in the prep cooler (chicken and other meat items, dairy products) were relocated to a properly working cooler. Staff were instructed to monitor the prep cooler temperature and ensure it is capable of maintaining temperatures of 4C or colder prior to using to store potentially hazardous food items.

      • Observation (CORRECTED DURING INSPECTION): Damp wiping cloths were stored on countertops in between uses.
      • Corrective Action(s): Store all wiping cloths in your food-contact surface sanitizer (such as Multi-Quat) in between uses in designated sanitizer pails at each station. Ensure to change the sanitizer solution every 2 hours or sooner if the solution becomes visibly cloudy/dirty.
