      • No prepared sanitizing solution in kitchen at time of inspection.Use 1/2 tsp of regular bleach in 1L of water to prepare a 100ppm chlorine-based sanitizing solution OR another approved sanitizing solution and ensure it is used on food contact surfaces and counters frequently throughout the day.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Prep cooler on cook line measured 8 degrees Celsius in lower section. Products stored in upper section measured between 8 and 10 degrees Celsius.Adjust or service cooler to ensure food can be maintained at 4 degrees Celsius or less.

      • No chlorine detected in dishwasher rinse water.Solution in container was clear (no longer yellow).Solution changed out, unit primed, and 100ppm was eventually detected.Use test strips daily to check dishwasher sanitizer concentration.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Handwashing sink was blocked / obstructed by a cart.Both the soap and paper towel dispensers at the handwashing sink were empty.Cart moved and dispensers restocked during inspection.Handwashing sinks must be unobstructed, easily accessible, and equipped with both soap and paper towel in dispensers at all times.

      • Numerous small flies present in shisha cleaning room.Address fly issue.
