   • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
     • **Corrected**Chlorine sanitizer spray bottle measured 1000 ppm. - Operator remade the chlorine sanitizer and tested 100 ppm. **Ensure chlorine sanitizer is maintained at 100 ppm at all times.
   • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
     • Staff was not following proper manual dishwashing procedures. Staff mentioned that the dishes are not sanitized after washing and rinsing.**Please ensure proper manual dishwashing procedures are followed (i.e. wash, rinse and sanitize).
   • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
     • *Corrected**Sanitizer bucket was stored inside the basin of the hand sink. - Operator removed the bucket during inspection. **Ensure hand sink remains unobstructed and accessible at all times for proper handwashing.
   • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
     • Food handling permit was not displayed. **Ensure food handling permit is displayed at all times where it is easily visible to the patrons.
   • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
     • Staff was using a small deep fryer unit under the prep table without active ventilation.**Please refrain from using the deep fryer.**Ensure the deep fryer unit is removed from the facility.Note: As per the food handling permit, facility is restricted from performing any grease-producing cooking.
