- Observation(s): Temperatures of a small cooler underneath a prep table and an upright cooler located at the back fluctuated between 4C to 10C. Operator instructed to take the following actions: a) move all potentially hazardous food to colder side of coolers, b) do not overstock the small cooler as it is subject to greater temperature fluctuation, c) monitor temperature of the two coolers, and d) should the temperature does not stabilize and coolers are not capable of maintaining 4C or below, they must be repaired in a manner that can maintain 4C or below.
