- Sanitizer used requires a potable rinse step and a contact time of 5 minutes. Obtain an approved sanitizer that is safe on food contact surfaces and has a low contact time. Approved sanitizer solutions are bleach, quaternary ammonium compound, and iodine. If an alternative sanitizer is used, consult the public health inspector prior to purchasing.
