      • Observation (CORRECTED DURING INSPECTION): Handwash sink in the back was observed obstructed with kitchen equipment.
      • Corrective Action(s): Operator removed the equipment from the sink basin. Ensure to only use the handwash sink for handwashing and keep it available for staff to wash hands frequently.

      • Observation (CORRECTED DURING INSPECTION): 1) Ice scoop handle observed
      • 2) Meats observed stored on the floor of the walk-in cooler.
      • 3) Bleach sanitizer observed over 200ppm chlorine.
      • Corrective Action(s): 1) Operator removed the ice scoop and placed in a clean, dry container. Ensure to clean and sanitize the scoop every four hours.

      • Observation (CORRECTED DURING INSPECTION): No staff on-site observed to have valid FOODSAFE Level certification.
      • Corrective Action(s): Ensure at least one staff at all times during operation must have valid FOODSAFE Level 1 certification or equivalent able to present to inspector for validation.

    • 206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): Note: This is a repeated violation.
      • Rice was keeping warm in the rice cooker and noted with an internal temperature of 24.6C. As per operator, they have already heated the rice in the microwave prior to storing it in the rice cooker.
      • Corrective Action(s): Staff reheated the rice during the inspection.
      • Operator must ensure any food intended for hot holding MUST be reheated (microwave/ oven/ grill, etc) to at least 74.0C, preheat the hot hold unit to at least 60.0C, before putting the reheated food in the hot hold unit.
      • Operator must ensure this is done correctly for all reheated food for hot holding, further repeated violation may result in escalated enforcement actions.

      • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): No sanitizer container/ spray bottle was set-up during the inspection. Active food preparation was observed during the inspection.
      • Corrective Action(s): Operator mixed a sanitizer solution in a container for in-use wiping cloths. 200 PPM chlorine residual detected in the container.
      • Whenever there is active food preparation, operator must ensure he or staff prepares sanitizer prior to starting food prep.

      • Observation: 1. Leaking noted in the walk-in cooler.
      • 2. Front cooler in the server area was noted with an air temperature of 12.1C.
      • Corrective Action(s): 1. Operator is looking into getting a contractor to address issue. Operator must fix the leaking as pooling water could become an attractant to pests and encourage mold growth. Note: This is not a small repair so operator has been given until the next routine inspection to rectify issue.
      • 2. Operator is aware of issue. No cold potentially hazardous food is stored in this cooler. Only drinks that do not require refrigeration was stored in this unit. Note: Operator is thinking of adding an ice cream freezer to the front serving area. Please submit an updated Floor Plan to reflect change in cold hold equipment. Provide an updated Sanitation Plan to address how the ice scoop will be stored, as discussed.

      • Observation (CORRECTED DURING INSPECTION): Cooked rice was noted in the rice cooker at 13.0C. Note: Rice was recently took out from the refrigerator less than an hour ago.
      • Corrective Action(s): Operator took out the rice and microwave prior to putting back in the pre-heated rice cooker for warming.

      • Observation: 1. > 200 PPM chlorine residual noted in a chlorine sanitizer spray bottle.
      • 2. Missing light shield on the fixture in the dishwashing area.
      • Corrective Action(s): 1. **Issue corrected at the time of inspection** Sanitizer spray bottle was emptied and refilled. 200 PPM chlorine residual was detected after the bottle was refilled. Reviewed the required concentration with operator to obtain 100 - 200 PPM chlorine residual.

      • Observation: Multiple containers of food (sliced cucumbers, tomatoes, onion, green peppers) were stored uncovered in the walk-in cooler.
      • Corrective Action(s): Cover all food in the walk-in unit. Any food stored for a prolong period in a refrigeration unit must be stored protected with a lid/ plastic wrap.

      • Corrective Action(s): 1. Clean and sanitize all areas noted with grease buildup, especially areas that are not going to be professionally cleaned. As per operator, someone is coming next Monday to clean the hood.
      • 2. Clean and sanitize the rack noted above the dish machine to ensure cleaned utensils are stored cleaned after washing.

      • Observation: Hot water tap unable to be turned on in the handwash sink beside the upright freezer.
      • Corrective Action(s): Facility does have immediate access to another sink (2-compartment sink) that they are using for handwashing. Facility may use this 2-compartment sink for handwashing until the actual handwash station is repaired. As per operator, a plumber is coming this Saturday to address the sink.

      • Corrective Action(s): 1. Re-arrange the raw eggs so they are stored below the cooked food in the walk-in cooler.
      • Follow the proper storage hierachy for storing food in all refrigeration, freezer and dry storage units. Raw meat and raw eggs must be stored below cooked or ready-to-eat food to prevent potential cross contamination.
