- All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. Rusty surfaces, rawwood. Must paint all raw wood with a non-toxic paint. Remove rust from cooking equipment. Repair condensor in freezer.
- 33. FOOD AND NON-FOOD CONTACT EQUIPMENT UTENSILS CLEAN, FREE OF ABRASIVE DETERGENTS
- All utensils shall be thoroughly cleaned and sanitized after each usage. Detail clean all equipment i.e., cooler/freezer, grills etc.

- The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Paint floors through-out i.e., inside walk-in cooler. Floors must be smooth dry (no water) easy cleanable with no holes. Replace all missing floor drain covers.
- 35. WALLS, CEILINGS, ATTACHED EQUIPMENT CONSTRUCTED PER CODE: GOOD REPAIR, SURFACES CLEAN AND DUST-LESS CLEANING METHODS
- The walls and ceilings shall be in good repair and easily cleaned. Seal all holes on walls/ceilings making walls/ceiling smooth & easy cleanable without holes, crack opening around and pipes/electrical work.
- 37. TOILET ROOM DOORS SELF CLOSING: DRESSING ROOMS WITH LOCKERS PROVIDED: COMPLETE SEPARATION FROM LIVING/SLEEPING QUARTERS
- Toilet rooms shall be completely enclosed and shall be vented to the outside air or mechanically ventilated. Provide self closing device on toilet door.

- Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. All cooking equipment must be under ventiation hood provide filters for hood. Provide electrical ventilation system for toilet area. Provide washbowl inside washroom under city pressure with hot & cold running water. Provide drain boards for 3 compartment sinks.
- 40. REFRIGERATION AND METAL STEM THERMOMETERS PROVIDED AND CONSPICUOUS
- All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. Provide thermometers inside all cooler/freezers.

- Cleaning equipment shall be properly stored away from food, utensils, equipment, and clean linens. Remove all clutter/organize. Removing unnecessary articles.
