    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1) There is some floor damage by the large oven and between the kitchen and baking area. - Please repair the floor, ensure it is smooth and easily cleanable. 2) Several of the wooden shelves/racks/dollys throughout the facility are wearing exposing raw/porous wood. - Please repair/repaint any exposed wood.

    • 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
      • A significant amount of cooling of soups/stews is done onsite. Have started doing a log but erase it after so current cooling log had no information on it. Should be keeping logs once completed and please send cooling log with temperature in it the next time soups are made and cooled.- Please keep cooling logs of all products that are cooled for storage to ensure they are going from 60C-20C within 2 hours and 20C-4C within 4.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The QUAT sanitizer solution was initially 0 ppm. - Was replaced onsite to be 200ppm. Please ensure all QUAT sanitizing solutions are between 200-400 ppm QUAT.
    • 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
      • A significant amount of cooling of soups/stews is done onsite. No cooling logs are kept. - Please keep cooling logs of all products that are cooled for storage to ensure they are going from 60C-20C within 2 hours and 20C-4C within 4.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • There is a gap in the weatherstripping on the back door by the office. - Please repair the weatherstripping, ensure there are no pest entry points.

      • Overall cleanliness is good, additional cleaning required in the back flour storage area. - Please clean this area.

    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Some boxes/bags of food were directly on the floor in some of the walk-in-freezers and near metal shelving in back of kitchen. Please store up off the floor.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Initially, a garbage can was blocking the front hand sink. - Garbage bin was moved, please ensure that this sink remains fully accessible for staff to wash their hands.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • There was a chip in the concrete under the overhead door that may allow for mice to enter under this door when it is closed. Please patch the chip in the concrete.The paint is peeling off the ceiling in spot just inside the door in the larger walk-in-freezer. Remove peeling paint.There is a fabric curtain hanging between the cafe and the bakery. It is dirty and can't be easily cleaned. Please replace with a material that is impervious to moisture and easily cleanable.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Several of the wooden bread forms were fraying. Please ensure these are repaired/replaced and if any loose staples are found in any, that these are also repaired or replaced.There were some food utensils on a shelf with soap and other chemicals. Keep chemicals stored below utensils. Corrected during inspection.There was a plastic food storage bin with a broken lid. Please replace the lid.There was a cracked wooden rolling pin, please replace it.There was a metal rolling rack that had piece of damaged wood on the bottom and the bottom was taped up. Please replace wood with smooth, easily cleanable material that is impervious to moisture or refinish the wood so that it is smooth, easily cleanable and impervious to moisture. Tape to be removed. Rack may need to be replaced .Some of the large metal food storage bins being used to hold bags of sugar, etc. have food debris in the bottom. Doesn't appear they are being cleaned when empty. Please ensure this is done.

      • Overall cleanliness is good, but a few areas need more thorough cleaning:-floor of the smaller walk-in-freezer-inside door of the larger walk-in-freezer-a few spots along walls where there is a bit of flour/debris build up-wood bottoms on some of the metal shelving racks-floor under some of the metal shelving in very back of bakeryPlease clean these areas.

    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • Foodhandlers were not shutting off taps with paper towel after handwashing. Paper towel to be used to prevent re-contaminating hands.One foodhandler was wearing several rings and bracelets. Rings to be removed. Bracelets can only be worn if aren't inhibiting handwashing and won't touch food or are covered with a glove.Hands were not always being washed between rinsing dirty utensils and taking clean utensils out of the dishwasher. Please ensure hands are washed before touching clean items.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • There were some jackets being hung on shelves used to store food and some personal bags/purses on a surface near plastic wrap. Store personal items separately.Some boxes/bags of food were directly on the floor in some of the walk-in-freezers and near metal shelving in back of kitchen. Please store up off the floor.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Keep doors closed as much as possible; two back outside doors were open. The one door had a screen but it was not low enough or tight-fitting enough to not allow mice in so screen should be replaced with one that is if want to keep the door open.Doors were closed during inspection.
