- Observation (CORRECTED DURING INSPECTION): Uncovered ready to eat salads stored under container of raw fish.
- This is a repeat violation.
- Corrective Action(s): DO NOT store ready to eat foods under raw foods. Operator reorganized the cooler so salads are stored elsewhere.
- Please have a dedicated spot for salads that are being served.

- Corrective Action(s): 1. Please clean ventilation hood. Ventilation hood must be cleaned more frequently due to the constant deep frying. Operator states that ventilation hood will be professionally cleaned on Tuesday.
- 2. Please continue to clean the kitchen to ensure there is no build up of food debris and gime.

- Observation (CORRECTED DURING INSPECTION): In use utensils, rice scoop and whisk, observed stored in room temperature water.
- This is a repeat violation.
- Corrective Action(s): Do not store in-use utensils in room temperature water. They must be stored in ice water or stored dry. Alternatively, wash and sanitize after each use. Operator store in use utensils dry. Please wash and sanitize every 2hours.
- Consider having ice in the freezer to have ice water bath.
- Whisk can be stored with the batter in the cooler as long as the handle does not come into contact with the food.

- Observation (CORRECTED DURING INSPECTION): Raw fish in container observed left on the counter. Surface temperature reads 18C, internal temperature at 0C. Operator says he is drainning the fish.
- Corrective Action(s): Do not leave raw fish out on the counter at room temprature. The container with rack fits in the cooler. Drain fish in the cooler.

- Corrective Action(s): 1. Onion was transfered to a pest proof container
