      • Single-use, disposable cups without a handle were observed stored in containers of bulk food items. Ensure that scoops are reusable, have a handle, and are stored such that the handles are not in contact with the bulk food items.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The kitchen ventilation system was required to be serviced by May 2026. Ensure that the ventilation system is serviced every 6 months or as often as a professional recommends.

      • There were cans of tomatoes stored on the floor in the pantry. Ensure that all food items are stored above the ground.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • A container of butter was found stored on the counter when not in use. The butter was moved into the refrigerator at time of inspection. Ensure that all high-risk food items that require refrigeration are stored at or below 4C when not in use.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. The main ventilation hood (located above the stoves) was required to be serviced by September 2025. Ensure that the ventilation hood is serviced every 6 months or as often as a professional recommends.2. There are leaks in the plumbing of the rear handwash station and 3-compartment sink. Ensure that the leaks are repaired and that the plumbing system is maintained in good working order.

      • Bleach sanitizer was noted at >200ppm. Please ensure the bleach sanitizer is maintained at a concentration of 100 ppm. Staff mixed bleach sanitizer during the inspection, and it measured a concentration of 100 ppm.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Food products were stored in a food grade container under the ingredient bins on the kitchen floor. Ensure all food products are stored at least 6 inches off the floor.

      • No temperature logs were available onsite.AHS template for temperature logs was discussed with the staff and principle. Copy will be provided with report to record ambient temperature of coolers and freezers twice a day.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1-Temerature under the hot holding equipment was measure as 35 degrees Celsius. There was no high-risk food was stored under hot holding. Ensure the hot holding temperature is maintained above 60 degrees Celsius.2- No thermometers were available in the facility to monitor cooking, hot holding, ambient temperatures of coolers and freezers.Install functional thermometers in all coolers and freezers to monitor their internal temperature.

      • Inadequate procedures for thawing frozen chicken were noted in the facility. A bag of frozen chicken was found in the kitchen sink, submerged in cold water for thawing. Approved thawing procedures were reviewed with the operator, who then placed the chicken bag in a bowl and turned on the running cold water.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?

      • No daily, weekly and monthly cleaning schedule was noted onsite. Facility was in a clean and sanitary condition. Cleaning schedules were discussed with the staff onsite.Use AHS templates to develop cleaning schedules for the facility.Facility was in a clean and sanitary condition.

      • The service sticker on the kitchen ventilation system indicated that it was due for servicing in May 2024. Facility management indicated that the vents were serviced but the new sticker was not put on. Ensure that the ventilation system is serviced every 6 months or as often as a professional recommends.

      • Chlorine sanitizer test strips were not available. Ensure sanitizer test trips are available for staff to measure sanitizer concentrations.

      • Expired and moldy food items present in the fridge, milk (Oct 24, 2023), relish (Oct 2023), raspberries, black berries, canned baby clams (2022). Operator removed the items from the fridge.Ensure all food items are not expired and in good condition for human consumption.

      • No acceptable sanitizer used in the facility. Use an acceptable sanitizer such as bleach at a 100ppm concentration.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Scoop handle was in the oats. Handle was removed out of the food item.Store scoops outside of the food product containers or with the handles sticking out from the food product when inside the container.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Sanitizer test strips cannot be identified if expired or not. Ensure sanitizer test trips are available and used when a new solution is made.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Vent hood maintenance was past due by one month, with the next cleaning due date indicated to be July 2023. Ensure that the maintenance of the ventilation system is up to date.Operator stated maintenance would be completed that evening (Nov 1, 2023).
