      • Observation: Manager increased temperature of final rinse tank. First cycle tested at 73c (At plate level). Next cycle tested at 67c (At plate Level). 3rd cycle tested at 65c (At plate level). As per previous report, dishwasher must consistently reach a "Minimum" of 71c (At plate level) on every cycle.
      • Corrective Action(s): Contact technician. Continue to sanitize dishes in the 3rd sink with 100ppm bleach for 2 minutes then air dry as per previous inspection report.

      • Observation: Lower rinse arm in dishwasher observed to be very loose. This may be why the final rinse temperature is not reaching minimum temperature.

      • Corrective Action(s): Have technician service the dishwasher as discussed.
      • Purchase dispenser for hand soap at front hand wash station

      • Corrective Action(s): Ensure staff are aware of the mixing ratio. Sanitizer solution to be changed a minimum of every 2 hours or as needed. Ensure time tracking is in place as discussed
