      • The concentration of bleach water in the spray bottles intended for sanitizing food contact surfaces was undetectable.If using bleach water for sanitizing food contact surfaces, the concentration must measure between 100-200 ppm.
    • 14. Does the special event vendor have an adequate supply of potable hot and cold running water and is the water sampled at required intervals?
      • There was no water available for the food facility due to the fact that the sinks had no power, so sump pumps could not be used. Food was being prepared without water being available.Water and the ability to wash hands is a requirement before any food preparation takes place.
