Operator stated that the tea was cooked at ~1 pm. * Facility staff strored the tapioca pearls in a refrigerator at the time of inspection. *Time labeling is required to ensure that cooked tapioca pearls are discarded after 2 hours if they are kept at room temperature. Otherwise, they need to be held at 4C or colder or at 60 or hotter.
