      • A container of Tapioca Pearls left on a countertop measured at a temperature of ~13C. Advised operator to ensure Tapioca Pearls are temperature controlled (stored at 4C or colder). - Tapioca Pearls were transferred to a cooler at the time of inspection. - Also advised operator to complete Time as a Public Health Control Application if they wish to hold Tapioca Pearls at room temperature for not more than 4 hours.

      • Cooked tapioca pearls (bubble tea) left on a counter was measured at 30C. Operator stated that the tea was cooked at ~1 pm. * Facility staff strored the tapioca pearls in a refrigerator at the time of inspection. *Time labeling is required to ensure that cooked tapioca pearls are discarded after 2 hours if they are kept at room temperature. Otherwise, they need to be held at 4C or colder or at 60 or hotter.
