    • 101 - Plans/construction/alterations not in accordance with the Regulation [s. 3; s. 4]
      • Observation: No ventilation has been installed above the ovens at the front and back of the kitchen. The walls were observed to have a build-up of grease. This can act as a reservoir for bacteria. No ventilation was observed for the steamer at the front of the kitchen as well which was releasing water vapour at time of inspection.
      • Corrective Action: Operator to install ventilation above ovens and steamer that is adequate to prevent the accumulation of smoke, grease, water vapour and objectionable odours. Operator to clean and sanitize and/or refinish the walls with grease build up.
