    • 210 - Food not thawed in an acceptable manner [s. 14(2)]
      • Observation: Operator stated that chicken is thawed overnight at room temperature in a sink filled with water and used the following day. (Public Health Significance) Thawing food at room temperature can cause parts of the product to remain in the temperature danger zone (4°C to 60°C) for extended periods, increasing the risk of growth of illness causing pathogens.
      • Corrective Action: Operator was advised to follow proper thawing procedures such as thawing foods in a hermetically sealed bag under running cold water, in the fridge or in the microwave oven (to be cooked immediately after).
    • 502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
      • Observation: No staff with valid FoodSafe certification were present at the beginning of the inspection. Although a certified supervisor arrived later, there is currently no assurance that a certified staff is always on-site during operating hours. (Public Health Significance)- Absence of FoodSafe certified staff increases the likelihood of unsafe food handling practices, increasing the risk of foodborne illness & non-compliance with food safety regulations.
      • Corrective Action: Manager mentioned that staff including herself is in the process of getting FoodSafe certified. Operator to ensure at least one FoodSafe certified staff member is present at all times during operation. Additional staff should obtain certification to ensure continuous compliance.
