    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The sanitizing buckets in use at the drive thru service station contained less than 50 ppm quats concentration as verified using test strips. It was determined that the quats dispenser at the three compartment sink needed to be run for about 10 seconds before the concentration provided increased to 300 ppm. The manager indicated the solutions would be charged shortly.

      • Hot held gravy containing meat based ingredients in the right side compartment of the steam table was initially at a maximum temperature of 55C. The operator advised that the supply would be replaced after being notified. The steam table temperature was found to be at a temperature of 73C
