- 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
- Observation: (CORRECTED DURING INSPECTION) Two of the five QUATs sanitizer solutions inside sanitation buckets in the premises were measured at a concentration of 100 ppm via test strip. Public health significance: QUATs-based solutions effectively sanitize surfaces against microorganisms at concentrations of 200 - 400 ppm. QUATs-based solutions with concentrations below 200 ppm may not adequately sanitize surfaces against pathogens and increase the risk of food contact surfaces to be contaminated with pathogens that can lead to foodborne illnesses.
- Corrective Action: Replace the old QUATs sanitizer solution inside sanitation bucket at the kitchen line with new QUATs sanitizer solution, and ensure the concentration of the new solution is between 200 ppm and 400 ppm. Operator must monitor the QUATs solutions every two hours or when visibly dirty/cloudy to ensure the concentrations are maintained at an adequate level.
- 401 - Critical Adequate handwashing stations not available for employees [s. 21(4)]
- Observation: (CORRECTED DURING INSPECTION) One of the three handwashing sinks, located in the kitchen’s prep area adjacent to the cooler and opposite to the chicken cookers, was not supplied with disposable paper towels. Public health significance: Drying hands upon washing them with hand soap and running warm water must be done in a sanitary manner using disposable paper towels. Otherwise, reusing cloth towels or wiping hands on clothing will contaminate hands with biological, chemical, and/or physical contaminants. Thus, this can lead to cross-contamination of equipment and food-contact surfaces which in turn may lead to the contamination of foods. Ingestion of contaminated foods may lead to foodborne illnesses.
- Corrective Action: Operator supplied clean disposable paper towels for the handwashing sink to ensure the sanitary drying of hands.
