      • Observation: Walk-in cooler:
      • - Floor very wet, but also parts of the floor near and around the door building up with slime-like organic mat. Mostly notable around and under shelf legs. Chicken juices likely contributing to this wetness, and has likely a high organic content.
      • - Edge of door trim beginning to accumulate food debris.
      • - Plastic door baffles look dirty and could be a point of cross contamination for staff entering and exiting the cooler.
      • Corrective Action(s): Keep floor of walk-in cooler as free from moisture accumulations as much as possible. Mop regularly. Do not allow the build-up of organics on the floor and target areas of floor where organic mat is visible.
      • Perform an extra cleaning around the door frame and door jam to remove build up of food debris.
      • Make sure door baffle is sanitized daily top to bottom AND when noticably dirty.
