      • Bleach sanitizer was being maintained at 1000 ppm.This was corrected by lowering the concentration to 100 ppm.
    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • Gloves were not being changed out between tasks; Operator was washing their hands with the gloves on.REQUIREMENT: Disposable gloves are meant to be single use. Do not was or reuse these gloves, and instead wash hand in between changing gloves.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Utensils and cooking equipment are being stored in handwashing sink.REQUIREMENT: Do not store any tools, utensils, or equipment to be cleaned in the handwashing sink. This sink is meant to be used for handwashing only.

      • Temperature logs were reviewed for the month of August regarding the foods received by Fueling Minds Catering. 1) There were missing logs between August 23-September 01 for hot holding practices, and no cold holding logs were being recorded.2) On August 15, it was recorded that hot foods arrived at 52C. Despite being under 60C, the food did not appear to be reheated by kitchen staff as the serving time temperature was identical.Since moving to parent provided foods, this concern shall be considered corrected.REQUIREMENT: Temperature logs need to be maintained for all foods received by the facility. Appropriate and timely actions (i.e. cooling and reheating) need to be done when foods are noted to be in the temperature danger zone (4C to 60C).

      • The facility has a 2-compartment sink and reusable dishes, meaning the dishwasher is crucial for safe and sanitary operation in the kitchen. The facility recently replaced their mechanical dishwasher, but it was not operating properly. Staff onsite were unable to troubleshoot the dishwasher, which was set to 'Demo' mode.Another problem identified and corrected by the Public Health Inspector was that the water connection was off.REQUIREMENT: Ensure staff members know how to operate the dishwasher, and that the dishwasher is able to reach proper sanitizing temperature.
