      • Observation(s): One of the food contact sanitizer bottles was below acceptable concentration at the time of inspection. Contents of bottle were discarded. Discussed with operator putting in place a procedure for regularly changing out all food contact sanitizer bottle contents.

      • Observation(s): The back entrance door was propped open. This can potentially allow pest to enter into the premise and increases the likelihood of food contamination. The back door must not be left open to prevent entrance of pest.
      • F2.2B The premises must be protected against entry of pests.
    • F3.3 Are written food handling procedures (Food Safety Plan) current and available on site?
      • Observation(s): Food Safety Plan was not available. A Food Safety Plan must available on site to address the use of time as a control in place. It must include food handling process for potentially hazardous foods (PHFs), critical control points, critical limits, and the actions to be taken if critical limits are not adhered to.
      • F3.3A Operator must have written food handling procedures that includes all potentially hazardous foods on site.
    • F3.4 Are written sanitation procedures (Sanitation Plan) current and available on site?
      • Observation(s): Sanitation Plan was not available. A Sanitation Plan must be available on site to provide reasonable assurance that the food premises is being cleaned and sanitized effectively and consistently.

      • Observation(s): 1. There are wet cloths sitting on the counter at the back. 2. There is visible residue build up inside the ice machine. 3. Oil is dripping from the fume hood. 4. There is an accumulation of dust, oil and dried food debris behind the grill and deep fryer.
      • F2.5B The premises must be properly constructed and maintained in good, clean and sanitary condition.
      • F2.5C Wiping cloths must be maintained and stored in a sanitary manner.

      • Observation(s): QUATs sanitizer on the prep line and also in the bar area had 50 ppm QUATs solution detected in the sanitizer bucket. Solution was dumped and new QUATs was added to the bucket. This was corrected during inspection. Ice scoop was seen placed in an area that was not easily cleanable. Ice scoop was removed and placed in the dishwasher for sanitizing. This was corrected during inspection.
