      • Observation:
      • Accumulated grease and food debris on the exhaust canopy filters, gas range top, and the gas range catch tray. This is a fire hazard and it will attract pests.
      • Corrective Action(s):
      • - Wash and clean the mentioned areas with commercial/restaurant grade degreasers to remove all the grease and food.
      • - Increase the frequency the mentioned areas are cleaned to prevent the accumulation of grease and food.

      • Observation:
      • Found some mice droppings on the floor under the dry food racks, and on lower shelves of prep tables. Mice and their droppings carry disease.
      • Corrective Action(s):
      • 1) Contract a professional pest control company to conduct an inspection of the premises; to find and block any hole/opening; to eliminate the mice. and to monitor for pests for at least 1 year.
      • 2) Clean up the mice droppings and sanitize (with bleach & water) all surfaces that came into contact with the droppings.
      • 3) In the morning, before starting food preparation, inspect the whole kitchen for mice droppings. If found, clean them up immediately and sanitize surfaces with bleach and water.
      • 4) Follow all recommendations made by the pest control company.
      • 5) Start using commercial grade chemical cleaners/degreasers to clean all surfaces and equipment in the premises.

      • Observation:
      • Surfaces (doors, handles, table & equipment legs, racks, shelves, etc.) and equipment are sticky with grease. The grease will attract pests.
      • Corrective Action(s):
      • Purchase and use commercial grade chemical cleaners to remove the grease. A thorough cleaning of all surfaces must be done, from top to bottom.
      • It is recommended that disposable gloves are not worn, as staff don't realize the gloves are greasy/dirty as they can't feel it. Yet, when their hands get greasy/dirty, they will wash their hands and less likely to touch surfaces with dirty hands.

      • Observation:
      • Aluminum foil covering the stainless steel backsplash of the flat grill, had accumulated food and grease on it. Owner stated this is changed once a week. Foil is not durable or cleanable, the accumulated grease will attract mice.
      • Corrective Action(s):
      • Remove the aluminum foil at the end of EVERY night and throw it away. Place a new piece of aluminum foil on the surface in the morning. If this is not done, do no use aluminum foil to cover surfaces.
