      • 1. The Operator was unable to locate a copy of their food safety training certificate.COMPLETE THE FOLLOWING:1. Please locate the food safety certificate. If unable to locate, register in a food safety course from the list of recognized courses in Alberta.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. Walk-in cooler: a. Hole noted on the north wall close to the floor inside the cooler.b. Observed a square opening on far wall. COMPLETE THE FOLLOWING:1. Repair areas noted above, so they are smooth, non-absorbent and easy to clean.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1. The underside of the handles of the pizza prep cooler were dirtied. 2. Leftover food debris noted on the white pizza cutting board in the front area.3. Old food debris noted on surfaces of the pizza oven. COMPLETE THE FOLLOWING:1. Clean the underside of the pizza cooler handles often to prevent contaminating foods handlers' hands.2. Ensure the pizza cutting board is thoroughly cleaned to remove debris and then sanitized. It must be cleaned and sanitized at least every 4 hours. 3. Clean the pizza oven.
