      • Sanitizer was not at appropriate concentrations initially, but were re-mixed during the inspection. Ensure sanitizer is maintained at 100 - 200 ppm chlorine

      • The mechanical dishwasher was not dispensing any sanitizer. Repair dishwasher and ensure it is dispensing a 100 - 200 ppm chlorine during the rinse cycle.
