      • Observation: There was no soap in the dispenser at the hand sink. The cold water tap wasn't working.
      • Corrective Action(s): Repair the tap at the hand sink so that there's hot and cold running water. Refill the soap dispenser.

    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: General cleaning required. Dirty knives were being placed back on the knife rack.
      • Corrective Action(s): Sweep and mop the floor. Pay attention to areas under the fruit storage bins. Store only clean knives on the knife rack.

      • Observation: Walk-in cooler temperature was 9 degC according to my thermometer and the one inside the unit. The guage on the outside indicated a temperature of 4 degC. Cooler could be in defrost mode.
      • Corrective Action(s): Check the thermometer that's inside the walk-in cooler in an hour. If the temperature hasn't dropped to 4 degC or below, get the cooler serviced. Do not rely on the temperature gauge located outside the cooler as these are not always accurate.

      • Observation (CORRECTED DURING INSPECTION): There was no prepared sanitizer solution.
      • Corrective Action(s): Manager had staff purchase a spray bottle during the inspection and prepared a 100ppm bleach solution. LABEL THE BOTTLE. Ensure countertops and large cutting boards are sanitized with sanitizer as discussed.

      • Observation: A knife noted with rust build-up and another with a piece of the blade missing.
      • Corrective Action(s): Discard these knives and purchase new ones.

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): Cutting boards and knives are washed with soap and bleach. There was no prepared sanitizer for wiping down the countertops.
      • Corrective Action(s): As discussed, wash cutting boards and knives with soap and water first, then soak in a 100-200ppm bleach/water solution for at least 2 minutes before air drying. Make up a sanitizer (e.g. bleach/water solution using 1/2 tsp bleach per L water) and use this for sanitizing your countertops. Label the sanitizer bottle so it doesn't get mixed up with the water bottle for spraying vegetables.

      • Observation (CORRECTED DURING INSPECTION): Processed vegetables and fruits on bottom shelf of open display cooler were 7 degrees Celsius.
      • Corrective Action(s): Processed vegetables and fruits are considered potentially hazardous foods and shall be stored at 4 degrees Celsius or less. Adjust the thermostat on the cooler and/or rearrange how the products are displayed. The second and top shelves were 4 degrees Celsius or less. Operator instructed to correct at time of inspection.

    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: 1. Paper towel dispenser in processing area was broken.
      • 2. Large white cutting board with centre cut-out is dirty with mildew in the crevices.
      • Corrective Action(s): 1. Operator indicated a new paper towel dispenser is on order but could take more than one month. In the interim, use a table top paper towel holder rather than keeping the paper towel roll directly on a counter/shelf.
      • Date to be corrected: July 9, 2020
      • 2. The large cuttting board will need to be replaced if it cannot be effectively cleaned. Operator agreed to replace the cutting board but indicated it will take about 7 weeks for a replacement without a centre cut-out. You may consider re-surfacing but this option may not be very feasible given the current thickness of the cutting board. In the interim the operator is using smaller cutting board to prepare products.

      • Observation (CORRECTED DURING INSPECTION): Cut melons not stored at 4 degrees Celsius or less.
      • Corrective Action(s): Cut melons in the display cooler were 14 degrees Celsius. Operator said display cooler is not working properly. Instructed operator to keep cut melons at 4 degrees Celsius or less. Operator sent staff to purchase ice to keep the melons cold. Operator said melons are cut fresh every morning.

      • Observation: Display cooler was not capable of maintaining foods at 4 degrees Celsius or less.
      • Corrective Action(s): Display cooler must be able to maintain foods at 4 degrees Celsius or less, especially potentially hazardous foods such as cut melons.
      • Date to be corrected: June 3, 2019.
