- At the time of inspection, the mechanical dishwasher (which utilizes hot water for the final sanitizing step), did not achieve the required 82 C or 180 F and measured at around 61 C.Please ensure the temperature of the booster heater is adjusted to achieve this above required temperature.
- 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
- Ensure an accurate digital thermometer is purchased to be utilized for measuring the hot water temperature for the final sanitizing step in the mechanical dishwasher at the dish level.This thermometer must be able to withstand the hot water temperature inside the machine.
