OBSERVED AN INFESTATION OF COCKROACHES INSIDE OF THE PREP AREA. OBSERVED APPROXIMATELY 40+ LIVE COCKROACHES ON AND INSIDE OF THE WALLS OF THE PREP AREA. ADDITIONAL PEST CONTROL SERVICE IS NEEDED TO ELIMINATE THE PEST ACTIVITY. CRITICAL VIOLATION 7-38-020.

DETAIL CLEAN THE FOLLOWING: LIGHT SHIELDS AND CEILING TILES IN THE PREP AREA, VENTILATION HOOD FILTERS, GREASE BUILDUP BETWEEN THE WOK STATION AND THE WALL, STORAGE SHELVES THROUGHOUT THE PREP AREA.

- The walls and ceilings shall be in good repair and easily cleaned. OBSERVED OPENINGS IN THE WALLS OF THE PREP AREA AND BASEBOARD THROUGHOUT. MUST SEAL ALL OPENINGS AND REGROUT THE BASEBOARD WHERE NEEDED.

- OBSERVED A DRAIN LINE WATER LEAK AT THE EXPOSED HANDSINK OF THE SUSHI PREP AREA. MUST REPAIR SOURCE OF LEAK. ALSO OBSERVED THE CONDENSER LINE OF THE WALK-IN COOLER UNIT DRIPPING INTO A BUCKET. MUST REPAIR THE DRAIN LINE. REPAIR THE LOOSE FAUCET AT THE 3 COMPARTMENT SINK IN THE PREP AREA.
