    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The lactic acid-based surface sanitizer solution in the salad prep area tested at 0 ppm using the operator’s test strips. Staff prepared a new solution, which tested at 1875 ppm, within the required effective concentration range.Ensure all sanitizer solutions are routinely tested and maintained at effective concentrations prior to use and throughout operations to ensure proper sanitation.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • In the baking area, a small metal bowl was observed submerged in the cornbread mix. In the main kitchen, a disposable paper container was found in the pancake mix within its bulk bin. Staff removed both items from use during the inspection.Ensure that appropriate scoops with handles are used for dispensing food and stored properly to minimize the risk of cross-contamination.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • No paper towels were available in the dispenser at the handwashing station in the main kitchen area; staff replenished supplies at the time of inspection.Ensure the handwashing station is consistently stocked with liquid soap and paper towels at all times to support proper hand hygiene.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • A stainless-steel wire mesh strainer with damaged and exposed wires was observed in the dishwashing area. The staff member discarded the utensil during the inspection.Ensure all utensils and equipment are maintained in good repair to prevent potential physical contamination of food.

      • Additional cleaning is required in the following area:- Ceiling air vent covers in the first row from the main kitchen were observed to have a buildup of dust.Ensure the identified areas are thoroughly cleaned and maintained in a sanitary condition at all times.

      • Additional cleaning is required in the following-All the exhaust vents-the wall behind the ice machine (shown to chef)-the wall behind the handwashing sink near to the ice machine.-some of the mechanical ventilation hoods were greasy/oil droplets observed.Action required:Please clean indicated areas.

      • The butter was at ~10C in steel containers in the cold holding unit. The operator put a lid on all containers.
