      • Observation (CORRECTED DURING INSPECTION): Observed an employee wiping the stainless steel food contact surfaces with a rag from the sani bucket. Tested the bucket and measured 0ppm of bleach.
      • Corrective Action(s): Operator poured the old solution from the bucket and made a new sanitizer solution tested at >100ppm. Ensure that all sanitizer buckets are replaced every 2-4 hours. Check the sanitizer solution to ensure the correct concentration is made.

      • Observation (CORRECTED DURING INSPECTION): Main handwash station in the kitchen do not have hot water coming out of the faucet.
      • Corrective Action(s): Operator adjusted the hot water line, hot water is available from the faucet

      • Observation (CORRECTED DURING INSPECTION): Dead mice observed on a sticky trap in the dry storage area
      • Corrective Action(s): Operator removed the sticky trap and replaced with a new one. Create a schedule and map to check sticky traps and remove any pests on them.

      • Observation: Door sweeper missing and garage door seals are worn out at the main receiving area and dry storage area.
      • Corrective Action(s): Install a door sweeper to the doors and replace/repair the door seals so that there are no exposure to the exterior.

      • Observation (CORRECTED DURING INSPECTION): Ice cream/cream bags on pallets are thawed overnight in Produce area at room temperature.
      • Surface temperature between 7-10C.
      • Corrective Action(s): Discard any bags that have been over 4C for more than 2hrs.
      • Monitor thawing at all times.
      • Thaw in coolers ahead of time.
      • Operator moved the pallets and followed food safety plan in place for corrective actions.

      • Corrective Action(s): Repair the mechanical dishwasher so that final rinse temperature reaches at least 71C or 160F on the dish surface. Record the temperature daily and keep the temperature monitoring log on-site.

      • Observation: A smal water leak was observed around hot water tank in the chemical storage room.
      • Corrective Action(s): Maintain plumbing so that there is no water leak as it can be a source of water for potential pest.

      • Observation: Some mice droppings found in the storage area attached to the kitchen. The pest control activities are being undertaken by kitchen management. Several glue traps were seen at the time of inspection.Weather stripping adequate underneath all loading areas doors.
      • Corrective Action(s): 1. Clean floors and floor wall junctions undernealth all storage shelves.
      • 2. Use hot water and bleach to clean floor underneath all shelves
      • 3. Remove all Tom Cat bait stations from food storage areas ( corrected during the inspection).
      • 4. Place more snap traps and glue traps against the wall underneath the shelves along all walls.
      • 5. Keep monitoring the areas underneath the shelves for any signs of rodent activity (droppings).
