- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- PREVIOUSLY - The operator has arranged to have a used commercial rangehood installed in the kitchen over the domestic gas stove/oven - this is satisfactory.The only problems with this used range hood are: - missing 2 filler block off metal panels to fill in the empty space next to the filters on each side. - missing the grease catch can.Please install stainless steel metal filler panels for each side of the range hood filters and install a grease catch can under the filter tray, as discussed during the inspection.Email photos of this work to the PHI, once completed.May 27, 2026 - a stainless steel bowl has been modified to use as the grease drip tray catch can - acceptable. - it would appear that aluminum soffit material has been installed as the "filler panels" next to the filters - this is NOT acceptable. This must be made of a stainless steel material so that it can stand up to the heat and be easily cleanable.
