    • 205 - Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation: (CORRECTED DURING INSPECTION) Milk in both a container and a bottle was observed stored in a non-functioning refrigeration unit at the front. (Public health significance): All cold, potentially hazardous foods must be stored below 4°C and kept out of the danger zone to prevent bacterial growth and possible food-borne illness.
      • Corrective Action: The operators mentioned that they were storing the milk there only during food preparation to avoid going to the walk-in cooler each time while cooking, and also stated that they have ordered a new, functioning refrigeration unit. Operators were advised to move any potentially hazardous cold foods to working refrigeration units and to avoid storing milk in non-functioning units. The unit must be repaired or replaced as required to ensure it can maintain a temperature of 4°C or lower.

      • Observation: Container of onions in the walk in cooler left open to contamination. (Public Health significance) - Contamination of food from contact with objects, people, pests or chemicals can cause serious illness.
      • Corrective Action: Cover or otherwise protect all foods from airborne contaminants, drips from raw foods, and contact with objects and staff

      • Observation: (CORRECTED DURING INSPECTION) Bags of frozen raw chicken found on the floor of the walk in freezer. (Public Health significance) - Contamination of food from contact with objects, people, pests or chemicals can cause serious illness.
      • Corrective Action: Move bags of chicken to shelving units not on the floor.

      • Observation: Food items in the walk-in cooler and dry storage area were observed to be stored on the ground (Public Health significance) - Storage areas should have adequate shelving such that all materials, including food and food items, are maintained at a minimum of 15 cm (6 in.) off the floor on racks, shelves or pallets. Contamination of food from contact with objects, people, pests or chemicals can cause serious illness.
      • Corrective Action: Ensure all food items are placed on racks and shelves which are at least 15 cm (6 in.) off the ground to prevent contamination of food as well as to allow for cleaning.
