    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Purchase required chlorine test strip papers for ensuring the final sanitizing step is minimum 100 ppm chlorine (bleach). Currently, the facility does not have any of these test strip papers.Recommended to the owner to purchase on-line through Amazon.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1) Overdue for the professional canopy hood cleaning. As stated by the owner, this should be completed by no later than April 2024 (due to winter weather, this type of work on the roof cannot be safely completed at this time).2) Dry storage bins (2) for the bags of unopened and opened flour. The current location near the handwashing sink is not the best option and the plan by the owner is to relocate to the upright Whirlpool refrigeration unit (which is to be discarded). Moreover, one of the bins does not have a lid which is required - my suggestion would be to purchase another dry storage bin on Amazon.3) Acquire mounting brackets for the newly purchased reconditioned refrigeration unit so the shelf can be put in place and allow the owner to then discard the Whirlpool refrigeration unit.Moreover, the existing light tube in this refrigeration unit does not work and there is subsequently inadequate lighting. Please disconnect this non-functioning light tube and replace with another one and hopefully can be purchased at the local hardware store in Viking.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Upright Rapid Refrigeration unit (storing vegetables and large containers of sauces) was observed to be reading at a temperature of 11 - 12 C which is not in compliance with the required 4 C or less at all times.There is a possibility that the unit was defrosting but the temperature reading during the inspection remained steady at above temperature.Please reach out to a refrigeration company to have the unit assessed.

      • 1) Inadequate levels of lighting in the kitchen facility particularly near the dishwashing sinks and the canopy hood. Recommend that the existing fluorescent light fixtures be replaced with LED fixtures to provide more adequate lighting to easier facilitate cleaning. Finally, the existing light bulbs for the canopy hood lighting should be changed to LED bulbs to provide more adequate lighting levels.
