     • Observation (CORRECTED DURING INSPECTION):
     • - Observed few of the hot held items (cooked meat, meat sauces) below 60C - ranged from 43C to 52C.
     • Corrective Action(s):
     • - Water bath from the warmer was measured at 42C. Ensure that the hot water bath is fully heated up to 60C or above before transferring the cooked/ reheated food items. It appears that the food items have cooled down over time since the warmer was not fully heated up. Items below 60C were reheated at the time of inspection.
