Ensure all containers are clearly labeled with their contents to prevent misuse and to ensure proper and safe use of chemicals.2. Jessica's Bannock & More: No hand sanitizer was available at the time of inspection. Ensure hand sanitizer is readily available where required to support proper hand hygiene practices.

      • 1. Mike's Jerky had elk, bison, and beef jerky at ambient temperature. Jerky has not been tested by a lab to determine water activity or pH.Jerky is considered a high risk food until it has been verified by an accredited laboratory to have a pH of below 4.6 and/or a water activity at or below 0.85. The lab testing results must be available onsite and available for inspection.Until the jerky has been confirmed to be low risk, it must be maintained at 4C or less.2. Cheese in a plastic bin with water bottles measured 13C - 18C. It appeared the bottles had been frozen but since melted.Vendor removed the cheese from sale.Cheese is considered a high risk food product and must be kept at or below 4C until it has been verified by an accredited laboratory to have a pH of below 4.6 and/or a water activity at or below 0.85. The lab testing results must be available onsite and available for inspection.Plastic totes or bins are unlikely to provide sufficient insulation to keep food items at 4C or lower. It is recommended that high risk food items be kept in an insulated cooler with ice. A thermometer must be present in the cooler to monitor temperature.Packages may be left out at room temperature for display provided they have "for display only" written on them and are not sold to the public.
