- 07. Are food temperatures during storage and processing being controlled to maximize food safety?
- Triplets Farm - the salad rolls were 14 C at the start of the market.Operator reports that they were made fresh in the morning. Some of these food items contain meat ( pork or shrimp ) which means temperature control is even more important for these food items. These rolls will need to be chilled quickly to 4 C and then stored, transported and displayed at 4 C or colder, until sold to the customer.June 14, 2024 - similar situation as last year - the table top display cooler was at 12 C and food items in the picnic cooler were at 6 C.If these High Risk food items cannot be completely chilled down before vendor leaves home, then they might need to be made the day before, so that they can be refrigerated overnight.
- 13. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
