      • The probe thermometer present was still in the original package, indicating staff are not verifying the internal temperature of reheated hazardous foods. Please ensure staff are verifying the internal temperature of taquitos during the day to ensure they are fully reheated to 74 C. Food mixtures must be reheated to 74 C and verified on the probe thermometer.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Test strips provided at the last inspection were not used, indicating the sanitizer concentration has not been verified to be at the correct concentration to reduce harmful bacteria. Please ensure staff that prepare sanitizer and/or wash utensils are trained to verify the concentration of sanitizer solution on a test strip each time it is made.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The end of the counter under the slushie machine is missing laminate and has exposed particle board. The exposed surface is not washable and is absorbent which can trap bacteria. Please ensure the end of the counter is sealed in a manner that makes it smooth, non-absorbent and easily cleanable.
