- Observation(s): Found packaged nacho cheese stored in a warming unit at 40°C, packaging instructions say it must be stored at 68°C. Corrected during inspection - Cheese will be stored straight in the warmer, which is able to maintain 70°C.
- 9 - Are foods handled in a sanitary manner and protected from contamination?
- Observation(s): Nacho chips are taken out of their bulk packaging and placed into boxes by the facility staff. There is no proper surface in the backroom for the staff to do this and staff have been repackaging the chips on cardboard boxes.
