      • Observation: Sandwich prep cooler measured 9 C. Operator adjusted dial to colder.
      • Corrective Action(s): Monitor unit. If temperature does not get below 4C, supplement all high risk foods with ice for this event. Reduce food volumes in inserts for tonight. Have unit serviced such that it can maintain 4C or less at all times.

      • Observation: Mouse activity noted at ice machine. Droppings and access points observed into pipe insulation and wrapping. Mice look to be using this conduit up and down into ceiling.
      • Corrective Action(s): Have pest control be more aggressive with trap placement in this space. Block access points as much as possible.

      • Observation: Mouse activity noted in kitchen, especially at the dish sink and beverage syrups space. Access through expandable foam around plumbing conduits noted. Dropping noted.
      • Corrective Action(s): Make sure staff clean around the grease trap and beverage syruips stoarge space.
      • Block access with steel or copper wool and anchor with expandable foam if necessary.
      • Make sure to inform pest control of any mouse or access points so they can take action.

      • Observation: Moderate volume of mouse droppings noted in concession. Mostly on floor wall edge throughout (including, walk-in cooler and dry storage), but droppings also noted on secondary shelves below burger assembly. Pest control in monthly.
      • Corrective Action(s): Increase Pest Control Visits as mouse population needs to be addressed based on droppings observed. Bite marks on some baseboards in concession. Clean up droppings so activity and movement can be monitored.

      • Observation: Noticable gaps around plumbing and electrical conduits. Noticed bite marks around some of the baseobards.
      • Corrective Action(s): Block holes and points of access as discussed. Ask Pest Control for advice on interior and exterior movemenet and use whatever means needed to prevent access or movement both inside and exterior.

      • Observation: Drain fly issue continues in this concession. Activity mostly noted around dish sinks and grease trap. Grease trap lid lacks seal and flies can be observed coming and going. Flies are spreading to other parts of concession and possibly other parts of facility.
      • Mouse droppings evident throughout concession floor, including walk-in cooler.
      • Corrective Action(s): Target drain fly breeding habitat in this concession as discussed. Grease trap lid must not allow the entry/exit of drain flies. Either replace lid or install gasket seal around lid and ensure it can fully close. Target other breeding areas after grease trap influence is removed.
      • Mouse activity must be addressed. Trapping and control can only be effective when using Integrated Pest Management techniques including removal of food sources. Discuss actions with Pest Control Contractor.
      • Review at next scheduled inspection.

      • Observation: Concession is not cleaned adequately. Many areas noted with accumulations of food debris/splatter, mouse droppings, greases and dust including the cookline, floor under equipment, floor in walk-in cooler and freezer, sinks (dishes and hand) etc. Multiple days since event.
      • Corrective Action(s): Thorough clean up is needed. Food debris should not be left for multiple days prior to clean up. Rodent and fly control can not be effective without improved and timely cleaning procedures. Review at next scheduled inspection.

      • Observation: Fruit/drain flies noted in sticky trap in storage room, around grease trap (moderate) and around shake/ice cream station.
      • Drain pipe network between the blender rinse machine and the dipper well not a closed system leading to or from small grease trap. No pee trap or other to isolate movement. Main sink grease trap lid not sealed. Flies observed coming in and out (significant).
      • Corrective Action(s): Target grease trap first to control flies. Grease trap lid must fit tight. Install rubber gasket or similar to lid to ensure flies cannot enter exit grease trap. Apply chemicals around edge of trap lid to discourage fly breeding/harbourage.
      • Target blender rinse/dipper well pipe network as secondary measure. Isolate grease trap with plumbing measures. Implement interventions to pipe network and add to sanitation plan and cleaning schedule as discussed.

      • Monitor acitvity after cleaning and continue IPM (Integrated Pest Management) practices with advice from Pest Control technician.

      • Corrective Action(s): A) Improve cleaning procedures post event(s) to minimize food sources and allow better evaluations of current mouse activities and tendencies. Recommend staffing a separate cleaning crew for days following events where there is a gap in concession/event activity.
      • B) Have facility operator plug holes around plumbing/electrical conduits where rodent activity noted.
      • C) PCO on-site regularly. Obtain detailed advice from technician for best practices to control mouse activity throughout facility.

      • Corrective Action(s): Make sure staff allow main feed system to prime with sanitizer before filling spray bottles or sani-buckets and done in preparation to potential rushes. Check with strips as standard practice.
