      • -The upright fridge was over full and items were pushing the door open causing the food to be warmer than 4C-More cold food storage might be required

      • -Fresh water tank measured .38m x .45m x .38m (x1000) = 65L-Fresh water volume should be at least 130L-Waste water volume was not measured. The waste water is supposed to be at least 10% bigger than the fresh water tank

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Chlorine/bleach sanitizer was too strong in the bucket used to store cleaning cloths. Ensure to portion it into a smaller bucket and adjust it to 100 ppm.Discussed that the concentration of sanitizer be maintained at 100 ppm for effectively sanitizing food contact surfaces and for safety. Use 5ml (teaspoon) of bleach for every 2L of water.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • Food handling permit was not posted on the food truck.Ensure to post and display the AHS food permit visible to the public with other necessary documents/licenses.
