    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Fridge under the grill measured about 10C. Dial showed 44F.-Ensure fridges maintain food at 4C or below. Operator took dial thermometer from other fridge to check this one
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • No chlorine and iodine test strips available.-Obtain test strips for each sanitizing chemical used
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Back door has significant gap beneath it where light can be seen.-Seal the bottom of the back door from pest entry-Operator has materials, just need to be installed
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • In the kitchen, low wall divider between prep cooler and fridge has unfinished front edge (missing trim).-Ensure surfaces in the kitchen are smooth and easy to clean-Operator has trim available, just needs to be installed
