      • Chafing dishes are stored in used EXCEL meat boxes. Food equipment must be stored in a manner that protects it from contamination. Ideally, cleanable containers or clean cardboard not previously used for raw meat.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Sanitizer test strips are not available. Obtain sanitizer test strips to check bleach sanitizer concentration. (100 ppm = 1 tsp bleach / 1 L water)
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • Operating without a food handling permit.
