    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The new dish washer cycles were a bit off.The wash cycle was about 6 minutes long at a temp of 105 F.The final rinse cycle was 1 minute long at a temp of 126 F.Typically for a commercial style dish washer the wash cycle is about 1 minute long at a temperature of around 140 F to 150 F and the final rinse cycle is less than 30 seconds at a minimum temperature of 180 F/82 C.Please have the dish washer adjusted to factory specifications, keeping these times and temps in mind.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The paper towel was not in a dispenser, at either of the hand wash stations.Please install covered paper towel dispensers at both sink locations.
