      • Observation (CORRECTED DURING INSPECTION): A) Dishwasher detergent and sanitizer containers empty. Measured 0 ppm chlorine.
      • B) Spray bottles tested and two of three bottles no reaction. One within specifications for Sink and Surface.
      • Corrective Action(s): Staff changed both detergent and sanitizer feed and primed the system. Measured 50 to 75 ppm.
      • Tested solution at auto dispenser and read within acceptable range. Staff will fill less and change bottles more often. Closer to daily change is a better idea.

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): Dishwasher sanitizer bucket empty. No chlorine residual noted in system. Also, detergent transport tube empty despite container half full. Staff replaced sanitizer bucket and primed both detergent and sanitizer lines. Dishwasher measured at 50 ppm.
      • Corrective Action(s): Make sure opening staff check both sanitizer and detergent buckets each day and prime the system as necessary. Verify with chlorine test strips.
      • Violation Score: 5
    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: Mouse droppings noted in facility. Some activity, droppings, noted on secondary shelves around food equipment and utensils and in cupboards. Traps in place in several areas.
      • Corrective Action(s): Make sure droppings and areas where droppings accumulate are cleaned up on regular basis to avoid build up. This helps Pest Control target spaces for trapping and access blockage.
      • Clean up any food shelves or food equipment shelves where mouse droppings accumulate. Include a sanitizing step in these situations.
