    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • A bowl of rice was sitting at room temperature. The internal temperature of the rice was measured at 54C. The inspector was informed that the food is cooked right before service and distributed to all classrooms.Please reduce the amount of time food sits at room temperature before service to prevent it from entering the danger zone (4 - 60 C) by either preparing meals closer to serving time or keeping hot food above 60 C until service. The operator was instructed to reheat food in the microwave to 74 C before serving it to the children.

      • Chlorine test strips were expired.Please obtain test strips within their expiration date to verify the concentration of the chlorine sanitizer solution.

      • For medium risk food preparation, a separate handwashing sink is required in addition to the 3 sinks already available onsite. Operator has the option of adding a dishwasher instead.
