      • 2. All obstructions were cleared during inspection. Ensure handsink is accessible at all times.

      • 2. Kitchen washroom handsink not supplied with hot/cold running water. Manager stated the kitchen washroom is not used, and all staff use the public washroom, which is fully supplied with hot and cold running water, liquid soap, and paper towels.
      • Corrective Action(s): 1. Repair/replace cooler to ensure it maintains 4C or below at all times. Begin maintaining temperature logs for all cold/hot storage units. Correction date: 2 weeks
      • 2. Repair hand sink tap such that it is supplied with hot and cold running water. Continue to use public washrooms until sink tap is repaired. Correction date: 2 weeks

      • Corrective Action(s): Staff VOLUNTARILY discarded all PHF that were stored in the small undercounter cooler unit

      • Observation (CORRECTED DURING INSPECTION): Observed in use utensils (rice scoop and whisk) stored in ambient temperature water
      • Corrective Action(s): Staff discarded the water and placed the in use utensils at the dishwashing area. Ensure that in use utensils are either stored in ice water solution or in hot water (temperature > 60 deg C)

      • Observation (CORRECTED DURING INSPECTION): 1) Observed pink mold-like build up inside the walls of ice machine
      • 2) Food contact surface sanitizer spray bottles registered <10 ppm chlorine at the time of inspection
      • Corrective Action(s): 1) Staff discarded ice from the ice machine and thoroughly washed and sanitized the inside walls of the ice machine. No signs of pink-mold like build up noted in the ice machine
      • 2) Staff created new food contact surface sanitizer which registered at 100 ppm chlorine

      • Observation (CORRECTED DURING INSPECTION): 1) Back handwashing station was not supplied with water or with soap from a soap dispenser at the start of the inspection

      • Corrective Action(s): Staff supplied both handwashing stations with hot and cold running water, soap and paper towel during the inspection

      • Observation (CORRECTED DURING INSPECTION): Bucket of cooked noodles used for cold salad stored on the counter, surface temperature measured 20C.
      • Corrective Action(s): Operator moved bucket back into cooler. Any potentially hazardous foods that are left out for the rush hour must be put back as soon as possible or within 2 hours.

      • Observation (CORRECTED DURING INSPECTION): Bleach sanitizing solution was not available at time of inspection. One spray bottle for the front of house was brought out during the inspection, however measured >200ppm chlorine.
      • Corrective Action(s): There must be a sanitizing solution prepared for the front of house, back of house and dining room.
      • For a 100ppm solution, it is approximately 2mL of bleach with 1L of water.

    • 210 - Food not thawed in an acceptable manner [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): Observed 1 package of frozen shrimp thawing on the counter at room temperature. Surface temperature of the package remained below 4C.
      • Corrective Action(s): Operator moved package of shrimp into the cooler immediately. Discussed acceptable methods of thawing frozen foods with operators.
      • Frozen food must be thawed either in the cooler at 4C or colder, or in the prep sink under cold running water. Do not thaw in room temperature.

      • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: Screen door to the back entrance is broken, door does not close properly. Main door has an air gap underneath, exterior light can be seen from the inside.
      • Corrective Action(s): Operator to consult with landlord immediately to either install a door sweep on the main door or repair the screen door. Gaps may allow the entry of pests such as rodents.

      • Observation: 1) Several areas where cardboard is being used as a floor liner: under the dishwashing area and underneath 3 containers next to the ice machine.
      • 2) Vent hood filters appear greasy.
      • Corrective Action(s): 1) Remove cardboard liners. Cardboard is not a smooth and easily cleanable surface. If slippery floors are an issue, rubber mats may be considered.
      • 2) Vent hood filters can be removed and cleaned in addition to professional vent hood cleaning.

      • Observation: Front handsink at sushi counter does not have running hot water, cold water only. One faucet handle is missing. Operators informed that the landlord is aware of this issue but have not been given a timeline for repair.
      • Corrective Action(s): Replace the faucet handle and repair this sink so that there is running hot AND cold water. Update EHO with repair timeline.
