- Observation (CORRECTED DURING INSPECTION): Inspection conducted at 3pm. Kitchen slightly busy with a few orders being made.
- 1. Three containers of grilled meats observed stored at room temperature. Surface temperature measure 19C. - Grilled meats was not observed in use at time of inspection.
- 2. Bean sprouts in container of water, surface temperature measure 14C.
- Staff say they take out the food for lunch rush and put it back into cooler after rush. However temperatures suggest the food has been out for sometime.
- Corrective Action(s): Grilled meats returned to cooler. Ice added to bean sprout water bath.
- Do not store potentially hazardous foods at room temperature for more than 2hours before returning to the cooler. If food is stored at room temperature for longer than 2hours, food MUST be discarded after 4hours.
- If future inspection observe food improperly stored at room temperature, further enforcement action will be taken.

- If operator want to switch front cooler to drink cooler only, all the preportioned and opened bottle of sauces must be moved out and a sign must be posted infront of the cooler to ensure no all staff knows not to store potentially hazardous food in this cooler.

- Observation (CORRECTED DURING INSPECTION): 1. Front undercounter glass cooler measure approx 7C ambient temperature. Mostly holding drinks. Bags of bean sprouts observed.
- 2. Cooler under the grill measure approx 7C ambient temperature. Pork probed at 13C. Chicken probed at 16C. Shrimp probed at 9C. Staff stated that meats were cooked at 10:30 this morning.
- 3. Chopped vegetables and containter of bean sprouts observed left at room temperature even though it is not lunch rush. Inspection started at 2:30pm, restaurant only serving one table.
- Corrective Action(s): 1. Bags of bean sprouts moved to another working cooler in the front.
- 2. All meats moved to walk in cooler. This grill cooler is only to be used during lunch/dinner rush for two hours each. Smaller containers of food and in larger container in ice.
