    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: Rat droppings observed in the outbuilding storage. Some of the floor cover behind and around the upright coolers has bubbled or moved creating tunnels. Hard to see if this is contributing to harbourage or if further access has been gained. Parts of the flooring looks ready to allow more rat activity into the storage building from under the building. This should be investigated further. No food containers look accessed at this time and the space is generally well organized. Discussed with operator and she will be avaluating and making structural decisions within the next week.
      • The outside area is fairly well organized and there is minor rodent activity noted around the garbage bins. Most are in good shape still.
      • Corrective Action(s): Better organize the floor and/or floor covering around the coolers/freezer and possibly throughout the structure. Rats must not frequent this space without viable controls in place. Operator to work on this issue.

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: Dishwasher sign in place for staff to prime unit daily. Measured unit and found reading to be 25 ppm. Some chlorine getting into the system, but not at adequate levels.
      • Corrective Action(s): Return to manual dishwashing. Have unit serviced by technician to ensure 50 ppm solution can be maintained throughout day. Follow up needed. See date on report.

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: Dishwasher (low temp) not registering sanitizer, measured 0 ppm chlorine. Also noted the chlorine in the container looked like a clear water-like colour in both old and new container. Both were tried and primed into the system without any significant change in the chlorine reading. Tried multiple times.
      • Corrective Action(s): A) Immediately discontinue using the dishwasher and switch to manual dishwashing procedures as directed on signage in kitchen. Use three compartment sink.
      • B) Have unit serviced such that it can properly wash and sanitize dishes. Unit should measure 50 ppm chlorine solution or more. A follow up inspection is required prior to using this machine. See report for date of follow up.

    • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: It is quite evident in the outside back area that there is rat activity and the rats are gaining access to the garbage from the food premises. There are burrow holes everywhere indicating significant harbourage. Serveral of the plastic garbage containers have been eaten through and the garbage is now a food source.
      • Corrective Action(s): Clean up garbage that is lying aroudn the back yard. Take garbage cans that have been eaten through out of commission and replace with metal cans (more than the one in use). Transition garbage storage to metal can only. Contact Pest Control contractor to address rat population in back area. Provide recommendations from pest control for review at next inspection.

      • Observation: Outside garbage area observed with some garbage and food debris noted on ground, and in gravel area. Noted one of the garbage bins clearly chewed through and garbage inside easily accessible to rodents (likely rats). Bin lid missing on one container. Discussed with staff.
      • Corrective Action(s): This outside space needs to be organized and secured against pest activity to help protect food storage spaces from excessive pest activity. Good garbage storage practices also help control localized neighbourhood rodent activity.
      • *Replace any garbage bins that become damaged such that rodents can access. Make sure lids are always secured.

      • 309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
      • Observation (CORRECTED DURING INSPECTION): Some issues noted with chemical use in spray bottles. Quats (premixed) in use in kitchen, and bleach solution in dining room. Kitchen spray bottles using soap and water only not labelled properly. Dining room spray bottles with bleach state only that contents contain "sanitizer", and concentration measured too high (200+ ppm). Diluted these spray bottles to 100 to 200 ppm range.
      • Corrective Action(s): Make sure to properly label all spray bottles to the contents used. Make sure staff do not mix bleach solution with quats solution as this may cause chemical reaction. Make sure staff always measure accurately the amount of bleach to add to the spray bottles. Most spray bottles in use are less than 1 litre and an appropriate amount of bleach to add should be no more than 1/2 tsp.

      • Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottle not labelled. Also mixed with soap due to smell. Note: Soap will eat up the available bleach. Do not mix, or get a second spray bottle for soap and water only.
      • Corrective Action(s): Remixed solution and added bleach to 100 ppm. Labelled spray bottle.

      • Observation: Domestic fridge/freezer in storage out building freezer section measured -1 to -4 C. Food product in freezer not frozen.
      • Black bin Freezer in same storage building measured 0 C to -3 C.
      • Corrective Action(s): Make sure to implement daily temperature logs for all cooler and freezer units to ensure proper temperatures. Keep these logs for review at future inspections.
      • Replace freezer(s) with properly functioning units as discussed. Replace with commercial. Check at next scheduled inspection.

      • Observation: Food storage building floor partially redone to allow easy cleaning. OK for present uses. Avoid storage of any opened food products, including flours and grains.
      • Shelving in storage building ok for prepackaged foods and containers only, however, extremely unstable so not safe. Replace with shelving that is more stable and easily cleanable. Existing shelves may not be easy to clean and should be replaced with foodsafe shelves on wheels.
      • Floor reno incomplete. Make sure the entire floor is finished.
      • Walls and ceiling finish work to come this spring as noted in renovation plan previously submitted.

      • Observation: Commercial low temp dishwasher not dispensing sanitizer at final rinse step. Prime button unable to feed chlorine into the system. No residual measured.
      • Corrective Action(s): Discontinue using the dishwasher until fixed. Implement manual dishwashing as discussed. Unit must be fixed by follow up inspection date.
      • Fix such that final rinse temperature can achieve 50 ppm chlorine residual or more.

      • Observation: Out building 1 used for food storage and general food container storage. Floors, walls and shelves not constructed in a manner that is smooth impervious and easily cleanable. Most surfaces made with particle board, which is subject to deterioration even when painted. Floor is uncleanable.
      • Out building 2 used for food storage and garbage storage. Walls and floors constructed in a similar manner to building 1.
      • **Neither building in present form is appropriate for food related storage.
      • Corrective Action(s): Develop a plan to remedy above noted issues as discussed and submit by email to this office within 21 days for review and acceptance.
      • Complete work within 60 days of this report.

      • Observation: Floor in kitchen, espcecially around dishwashers and sinks significantly deteriorated. Wall construction in this area in similar condition. Signs of rodent activity, access and access control in this area.
      • Corrective Action(s): Floor needs to be redone in above noted area, but also in other parts of kitchen. Bare wood is visible in many areas of kithcen floor.
      • *When the domestic dishwasher is removed, the other dishwasher should also be moved and the floor repaired properly.
      • Submit correction plan with similar timelines noted for out buildings. Submit to this office for review.

      • Observation (CORRECTED DURING INSPECTION): Observed pooled eggs in use for french toast
      • Corrective Action(s): Please note that pooling eggs is not an acceptable practice. An alternative would be to use liquid whole pasteurized eggs OR crack eggs per order.

      • Observation (CORRECTED DURING INSPECTION): Observed several items out at room temperature at time of inspection at 18C, cut tomatoes, fresh relish, hollaindaise sauce, cooked potatoes,
      • Observed egg salad had recently been removed from the fridge and was at 4C - placed back in cooler
      • Corrective Action(s): All products above 4C discarded at time of inspection by staff.
      • Please note: you must maintain potentially hazardous foods at 4C or below. Best practice is to have a prep cooler with inserts that maintains foods at 4C or below.

      • Observation (CORRECTED DURING INSPECTION): No sanitizer prepared or availble for front of house or kitchen. Please note you must have sanitizer prepared and readily avaialble throughout he day for sanitizing food contact surfaces
      • Corrective Action(s): Prepare appropriately labelled spray bottles with a 100ppm Cl solution (1/2tsp bleach for 1L water) and have them readily available in the kitchen and front of house.
      • Tables at front of house are to wiped down and sanitized after each use.
